Black Bean Salad
Ingredients
Original recipe makes 1 Servings
| 3 tbFresh lime juice |
| 1 cn(15-oz) black beans, rinsed |
| Tabasco, to taste |
| 1 Ripe avocado, peeled and |
| 1 cShredded romaine lettuce |
| 2 tbolive oil |
| 2 tbMinced fresh parsley |
| 1/2 Red onion diced |
| 1 Mango, peeled and chopped |
Black Bean Salad Preparation
In a bowl, whisk together lime juice, oil, and salt to taste. Stir in remaining ingredients, except lettuce, and season with salt and pepper to taste. Let salad stand, stirring once or twice, 15 minutes for flavors to develop. Serve salad on top of lettuce.
