Suggest a better descriptionMix in a saucepan the first five ingredients until smooth. Pour in the boiling water and add the lemon zest. Cook over med heat, stirring constantly until thickened. Add butter and stir well.. Makes enough for 1 pie.
Meringue: Beat the 4 eggs whites with 2 Tbsp icing sugar and 1 tsp lemon juice until stiff peaks form. Spoon over pie. Cook at 350degrees until meringue is lightly browned.
