Original recipe makes 4 Servings
1/2 White onion, chopped
1 Garlic; minced
2 tbSambuca liqueur
1/2 Red bell pepper, diced
SALAD
DRESSING
Lemon; (juice of)
1 tsBalsamic vinegar
2 cCooked black eyed peas
2 tbFresh basil, chopped
1/4 cChopped fresh basil
1 tsBlack pepper

Black Eyed Beans with Basil Sambuca Dressing Preparation

Combine ingredients for dressing. Mix with sald ingredients & rest at least half an hour before serving. Season if desired. Adapted from "The Hamilton Spectator" August, 1993
