Ask for the bone marrow from the middle of the leg where the ratio of marrow to bone is the highest.
Soak moarrow for 12-24h in salted water to remove blood.
Place the bones in a large dish of ice water, add 2 table spoons of coarse salt and refrigerate,
Change the water 4-6 times and adding 2 more tbs of salt each time
Use the marrow immediately or freeze for 2 month.
To extract marrow from bones, drop in simmering water for 5min until it slides off the bones using a knife,.
Place immediately in ice water.
Refrigerate until use
Heat the butter over medium low heat in a sauce pan
Add the diced bone marrow and shallots and cook until the shallots are softened (3min)-(most of marrow should have melted
In another large sauce pan toast the saffron threads over medium heat until fragrant, about 30 sec.
Add the stock and bring to a boil then lower the heat so the stock barely simmers
Add the rice to the sauce pan containing butter, bone marrow and shallots and stir to coat the rice with the fat.
Add the wine and stir until the rice absorbs it all
Add a ladleful of hot stock at a time until it is absorbed by the rice.
Continue doing so one spoon at a time until it is slightly al dente (about 20 min)
Remove from heat stir in the cheese and season with salt and pepper
Serve immediately
