3 tbVegetable oil
1/2 cBaby corns
2 tbRed curry paste; or green curry paste
1/2 cbamboo shoots; Sliced
1 cWater; or chicken broth
10 Fresh basil leaves
RED CURRY
1/2 tsSalt; more or less to taste
1/2 Red bell pepper; julienned
3/4 lbBoneless chicken meat; cut
1/2 cStraw mushrooms
5 Kaffir lime leaves *
2 cnUnsweetened coconut milk;
GREEN CURRY

Red or Green Thai Chicken Curry Preparation

1. Fry curry paste in oil in saucepan until fragrant. 2. Add chicken and saute for about 1 minute over medium high heat. 3. Add remaining ingredients except basil leaves or red bell pepper. 4. Bring just barely to a boil; reduce heat and simmer 20-30 minutes. 5. Just before serving, stir in basil leaves or red bell pepper. Serving Ideas : Serve with Thai Rice NOTES : You can substitute shrimp, scallops, fish fillets, or beef for the chicken if you wish. a bit spicy, a lot delicious.

Easy recipe to follow, and easy meal to make. 2 TBSP is was too little curry for me, so I put in 7 TBSP, and it was perfect! Kids even ate it, so it obviously was too hot.
