Original recipe makes 1 Serving
2 large clovesGarlic
1 15-oz cangarbanzo beans
1/3 cupTahini
1/3 cupFresh Lemon Juice
1/2 cupred peppers

Red Pepper Hummus Preparation

Start by rinsing the garbanzo beans in cool water, and drain dry.

With processor running, drop garlic through feed tube and mince. Scrape down sides of work bowl. Add chick-peas, tahini and lemon juice; process until mixture is smooth. Add roasted peppers; process until peppers are finely chopped. Season with salt and pepper. Transfer hummus to small bowl.

Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.

Makes about 2 cups

Did a variation on this. Used grilled eggplant instead of the beans and added some red pepper flakes. Left out the sesame seed paste

This was fabulous! Everyones comments were helpful. I added olive oil to mixture when blending, drained garbanzos, and cut lemon juice in half with garbanzo liquid. I garnished with pine nuts and sun dryad tomato

A group of my schoolteacher friends/ staff and I are doing Weight Watchers together and MINUS the tahini this is still fabulous and very point friendly. Roasted the peppers myself.

I liked this the 2nd time around - the first time I didn't drain the garbanzo beans. It doesn't say to in the recipe, but I should have known better. Very tasty.

This is delicious! Next time I would use a little less lemon juice, substituting some of the liquid from the beans because it was a bit tart for my taste, but otherwise absolutely DELICIOUS!!

I always like trying new hummus recipes. I used homemade roasted peppers which were preserved in vinegar, and this lent a sweet and sour flavor to the hummus.
