Great for brunch
Preheat oven at 350 degree,
In a sautéed pan add olive oil heat on medium heat add slice mushrooms cook
until tender, add onions cook until soft add spinach to heat through. Set aside to cool.
Meanwhile in a bowl beat eggs, salt, fresh ground black pepper, half & half. Stir in mozzarella cheese,
mild cheddar cheese and the 3 tablespoons of cottage cheese add the cool spinach mixture stir.
Pour into a pan that has been prep with non-stick spray.
Add the tablespoon of Philadelphia chives & onion cream cheese spread dollop around the quiche
place in a preheat oven and bake for 35 minutes or until the edges get golden brown,
let it cool for 5 minutes, serve.
I use Daisy Cottage Cheese.
