rich and decadent cheesecake
Combine crust ingredients, press onto bottom of a 9" springform pan. Set aside.
Combine cream cheese sugar and flour, mixing until well blended.
Add eggs, one at a time, mixing just until combined. Blend in sour cream and Amaretto; pour over crust.
Bake in a 450 degree oven for 10 minutes. Reduce heat to 250 and continue baking for another hour. Turn oven off, open door slightly and let cool at least 2 hours. Chill until ready to serve.
To glaze the cake combine the jam and Amaretto in a small sauce pan, stirring until smooth. Strain mixture and pour over chilled cake. garnish with almonds if desired
This is best served 100% chilled so make sure you make this the day before you want to serve it. I also have a pan of water in the oven while the cheese cake is baking. This will help reduce the cracks as will letting it cool VERY slowly (in the oven)
