The perfect Christmas morning breakfast. We always make these ahead and freeze them. They're such an easy, hassle-free breakfast that everybody loves (either this one or the sausage one we also make).
Best with my Mom's made-from-scratch crusts.
Blanch spinach over high heat to remove water. Saute onions. Combine beaten eggs with other ingredients, reserving some cheese to sprinkle on top. Pour into piecrust.
Bake at 3750 about 35-40 minutes—until knife inserted in center comes out clean. Let stand 10 minutes before serving.
TIPS: Some like to add a tsp of sugar and a pinch of nutmeg. I like to add about 1/4 to 1/2 cup of crumbled bacon.
Great leftovers or freeze by the piece for easy breakfast anytime! Reheat in the microwave on medium power setting.
