Classic poached egg dish with a lemony sauce
Fill a 14" sauce pan with 1.5" of water. Bring to a boil.
Split the english muffins. Crack eggs into 8 individual prep bowls. Place the Canadian bacon in a single layer on a microwave proof dish. Cover with paper towel.
Start hollandase (recipe follows)
Toast English mufffins and keep warm. Add vinegar to boiling water. Place eggs in water to poach. Microwave bacon for 1 minute.
Place 2 English muffin halves on each of 4 plates, cut side up. Place a slice of bacon on each muffin half. Place a poach egg on top of bacon. Top with hollandase sauce, enough to mostly cover the egg and pool on to the plate.
Hollandase sauce:
Heat the 6 tablespoons of unsalted butter until melted and bubbling. Keep hot.
Place 3 egg yolks in a sauce pan and whip vigorously for 1 minute, the yolks will thicken and turn pale yellow. Stir in lemon juice, Salt, pepper, cayenne, and 2 tablespoons of cold unsalted butter.
Place the egg yolk mixture over medium heat and whisk constantly until butter is melted, then about a minute more until you can see that the whisk is making clear lines in the bottom of the pan.
Remove from heat and pour in hot melted butter a little at a time until all butter is incorporated. Finish by whisking in the last 2 tablespoons of room temperature butter. Keep sauce warm next to a warm burner.
