Vegetable cooking spray
1/3 cFresh cilantro; chopped
1 cn(14.5-oz) tomatoes; canned,
1 cn(15-oz) blackeyed peas;
2 Garlic; minced
1/4 tsCumin powder
1/4 tsGround pepper
1 tbJalapeno; minced
1 cOnion; chopped
1/2 cCanadian bacon; chopped

Spray a large skillet with the cooking spray and saute the onion, Canadian bacon, and garlic for 5 minutes. 2. Stir in the cumin, pepper, peas, and tomatos and bring mixture to a boil. 3. Remove from heat, add remaining ingredients, and chill for 1 to 8 hours before serving. NOTES : Best served at room temperature. Serve with Italian bread or tortilla chips.
