A French Canadian Classic at its Best!!!
In very large pot, (i use my 9 quart) add beef, pork, onion, celery, bay leaf, savory, nutmeg and cinnamon. Brown meat.
Add water just to cover meat.. (almost soupy). Cover, Simmer on Med-Low heat for 1 hr. Stir often to help break up the meat.
Remove Bay Leaf
Add Breadcrumbs, mix well
Let cool until room temp. About 30min
Pour into bottom pie crust.
For the top shell, invert crust over floured wax paper... flatten and roll out with rolling pin to about 10 in. Use wax paper to help place on top of filled pie. Poke hole in middle.
Brush with beaten egg
Bake at 425(F) for 15min, reduce to 375 for 25min or until golden brown
