Blue Corn Blueberry Muffins
Original recipe makes 1 Recipe
| 1 cAM Blue Cornmeal |
| 1 1/2 cWater |
| 1/4 cAM Unrefined Vegetable Oil |
| 1 cFresh or frozen blueberries |
| 2 tsNon-alum baking powder |
| 1 cAM Unbleached White Flour |
| 2 tsHoney (may be doubled) |
| 1 tsVanilla |
| 1/2 tsSea salt (optional) |
Blue Corn Blueberry Muffins Preparation
Stir dry ingredients together. Combine liquid ingredients. Mix liquid and dry ingredients and stir until just mixed. Gently stir in blueberries. Fill oiled muffin tins 2/3 full.
