In pan, sauté onions, green chiles, and garlic until onions are translucent.
Add bacon and brown until crispy (remove onions and bacon), remove most of bacon fat.
Add brussel sprouts to pan with remaining bacon fat, add olive oil (to coat sprouts), add ½ cup stock and cover to steam sprouts. Steam for approximately 20-25 minutes while continuing to stir sprouts.
When sprouts have reduced, but are still firm, add bacon, onion, green chiles mixture, stir, and cook another 5 minutes.
