"It was a big hit here. You do have to be careful with the directions when it says combine the first seven ingredients you want to skip over the cinnamon and 5 tablespoons of sugar in this step. It took 50 minutes to bake in a 9 X 13 pan. (I used 3.5 cups of blueberries instead of the 1 pint listed in the recipe. I think the orignal recipe would be ok, but wanted more blueberry flavor.) Original recipe makes 10
1/4 cOrange juice
1 cVegetable oil
5 tbSugar; mix
2 tsCinnamon
3 cFlour mix
2 1/2 tsVanilla
1 tbBaking Powder
2 cSugar
1 ptBlueberries
4 Eggs

Blueberry Coffee Cake Preparation

Grease a 13"x9" or large tube or bundt pan. Mix first seven ingredients and set aside. Mix 5 T. sugar and 2 t. cinnamon and set aside. Layer 1/2 batter, 1/2 fruit, 1/2 cinnamon-sugar mixture and repeat. Bake at 350? for 30 min. to an hour, depending on the pan. Keep checking it.     I don't think I'd make this again. It wasn't bad, but it wasn't great. It took almost an hour and a half to cook in a bundt pan, and it uses large amounts of the ingredients for what turned out to be such a small, dense cake. Very dense. I was thinking it would be lighter and sweeter, what with 2C sugar and 2.5Tbs of vanilla. The directions should be revised to first state setting the cinnamon and sugar aside, then mix the other ingredients. And on that note, in what order should things be mixed? Dump everything into a bowl and mix it? Or add things in slowly one at a time? Alternate ingredients, or not?

    Make sure to read the directions closely, they are off, it says to mix the first 7, then continue reading and it makes no sense. It also took almost 60minutes to cook in the bundt pan. Good cake, I did use a power sugar glaze also.
