This recipe is perfect for a brunch gathering, a breakfast-for-dinner meal, or for a make ahead, weekly breakfast. It reheats in the microwave fabulously!
Preheat oven to 350°F. Line oven rack with foil (will save on clean up in case of a spill). NOTE: I do not recommend using cookie sheets as some tend to warp during cooking and that will cause major spilling and uneven cooking. Divide the cheese between the shells, 2 cups in each. Whisk together 5 eggs and 1 cup of the half and half. Pour into first shell and repeat for the second. Carefully transfer the uncooked quiches to the foil lined oven rack. Bake for 1 hour or until the center no longer “jiggles”. The top will be slightly browned. Let cool 5-10 mins before serving.
Note: You can add ingredients like leftover, steamed broccoli, bacon or ham bits, or spinach to jazz up your quiche.
