The secret to a great tasting Shrimp Po'Boy is crispy fried shrimp, crisp cold shredded lettuce and a good remoulade sauce on a warm, toasted loaf of fresh French bread. A sandwich doesn't get any better than this.
1. Heat oil in Dutch oven to 350 degrees F.
2. Mix flour with salt and pepper in shallow dish.
3. Mix the eggs, milk and Tabasco sauce in another shallow dish.
4. Place the Panko crumbs in a third shallow dish.
5. Dredge the shrimp in the flour, shaking off excess. Dip the shrimp in the egg mixture and then in the Panko crumbs.
6. Fry until golden brown and cooked thoroughly. Drain on paper towels.
7. Split the French bread loaves in half and brush with butter. Toast lightly.
8. Spread each loaf of bread with 1 tablespoon mayonnaise. Place a layer of lettuce and sliced tomato over the mayonnaise. Divide the shrimp evenly between the sandwiches.
9. Make and drizzle remoulade sauce over the shrimp. Cut the sandwiches in half and enjoy while the shrimp is still warm.
These are so easy to make and oh so good. Makes you think you are in New Orleans!
