1 3/4 cFlour
3 Egg yolks; beaten
1 cBlueberries
3 Egg whites; beaten stiff
1/4 tsBaking Powder
1 tsBaking soda
3 tbMargarine; melted
2 1/4 cYogurt
1 1/2 tsSugar

Blueberry Yogurt Pancakes Preparation

Sift dry ingredients. Blend together egg yolks and yogurt, mix well; add to dry ingredients, add margarine and mix together lightly. Add blueberries. Fold in egg whites. Bake on hot griddle. These were good but I had to alter it a bit. I cook with fat-free Greek yogurt which is thicker than traditional so I added 1/2 c. 1% milk. Add it before you mix in the egg whites. I also added 1/2 tsp. salt to deepen the flavor. Good and filling.

Delicious pancakes. I cut the recipe in half so did two eggwhites to my one egg yolk. The melted margarine added a wonderful flavor to the pancakes; all you need to add is some pure maple syrup on top and you are set!
