1 cFlour
1/2 cBrown sugar
1 cOats
1 tbOrange peel; Grated
1/2 tsSalt
3 tbVegetable oil
1 tbBaking Powder
1/2 tsCinnamon; or to taste
1 cFresh blueberries
2 Eggs whites; beaten
1/2 tsVanilla
1 cNonfat milk
1/3 cOat bran

Blueberry-Orange Maui Muffins Preparation

From: Diane & Mike (The Body Sculpting Diet Plan) These muffins are delicious. Preheat the oven to 425F. Combine the oat bran, flour, oats, brown sugar, baking powder, salt and cinnamon in a bowl. Mix. Add the milk, egg whites and oil. Stir until moist. Fold in the fruits and vanilla. Spray a muffin tin with nonstick spray and fill cup two thirds full. Bake for 25 minutes. Makes nine muffins.
