Original recipe makes 8 Servings
tomatoes, crushed
3 cVegetable stock
salt and pepper; to taste
1 1/2 cChopepd onions
1 Head curly endive, chopped
2 smCarrots, peeled & cut into
1/2 cChopped fresh parsley
1 cUncooked rice
10 Ripe plum tomatoes, chopped,
3 tbolive oil
half moons
2 Celery stalks, sliced
or 28 oz can whole plum
1 1/2 tbChopped fresh basil

Rice and Endive Soup Preparation

Cook the rice. Meanwhile, saute the onions, celery & carrots in the olive oil till tender. Add the stock & tomatoes & endive. Simer for about 15 minutes. Stir in the cooked rice. Add parsley & basil. Season with salt & pepper to taste. "Sundays at Moosewood Restaurant Cookbook"
