| tomatoes, crushed |
| 3 cVegetable stock |
| salt and pepper; to taste |
| 1 1/2 cChopepd onions |
| 1 Head curly endive, chopped |
| 2 smCarrots, peeled & cut into |
| 1/2 cChopped fresh parsley |
| 1 cUncooked rice |
| 10 Ripe plum tomatoes, chopped, |
| 3 tbolive oil |
| half moons |
| 2 Celery stalks, sliced |
| or 28 oz can whole plum |
| 1 1/2 tbChopped fresh basil |
Rice and Endive Soup Preparation
Cook the rice. Meanwhile, saute the onions, celery & carrots in the olive oil till tender. Add the stock & tomatoes & endive. Simer for about 15 minutes. Stir in the cooked rice. Add parsley & basil. Season with salt & pepper to taste. "Sundays at Moosewood Restaurant Cookbook"
