Rice and Endive Soup

|3 cVegetable stock|
|salt and pepper; to taste|
|1 1/2 cChopepd onions|
|1 Head curly endive, chopped|
|2 smCarrots, peeled & cut into|
|1/2 cChopped fresh parsley|
|1 cUncooked rice|
|10 Ripe plum tomatoes, chopped,|
|3 tbolive oil|
|2 Celery stalks, sliced|
|or 28 oz can whole plum|
|1 1/2 tbChopped fresh basil|
Rice and Endive Soup Preparation
Cook the rice. Meanwhile, saute the onions, celery & carrots in the olive oil till tender. Add the stock & tomatoes & endive. Simer for about 15 minutes. Stir in the cooked rice. Add parsley & basil. Season with salt & pepper to taste. "Sundays at Moosewood Restaurant Cookbook"
