Healthy alternative to french fries
1. Line Baking sheet with aluminum foil; brush with 2 teaspoons of olive oil. Set aside.
2. Cut the potatoes lengthwise into 1/2 inch thick wedges. Transfer to a large bowl. Add remaining olive oil; toss to coat. Sprinkle potato wedges with the salt and black pepper, tossing to coat. Arrange potatoes in a single layer on prepared baking sheet.
3. bake in a 450F oven for 12 min. Turn potatoes; sprinkle with the parmesan. Bake for 1-12 min more until tender and golden.
For crunchier fries; boil the sliced potatoes 2-3min, drain & pat dry, before brushing with olive oil and baking.
