Put wooden skewers into water to soak.
Combine dressing ingredients, except for garlic, in a small plastic bowl w/ cover. Shake well. Drop in crushed olive and refrigerate for at least 30 minutes. Take out garlic after 30 minutes. May be made up to 1 day ahead. Add cilantro and stir just before serving. Makes about 1/2 cup.
To make the salad: Reserve 3 tablespoons of the vinaigrette for brushing on shrimp and scallops. Put remainder in bottom of a salad bowl. Add red onion and lettuces, but do not toss. Put in refrigerator.
Oil grill and arrange 4 to 5 inches from heat source. Set gas grill on high all burners. Alternating pieces, skewer 2 shrimp and 2 scallops on wooden skewer. Repeat for remaining three skewers.
When grill is ready, place seafood on the grill for 2 minutes per side leaving lid off. They will continue to cook a bit after taken off the grill.
Toss the salad and prepare plates (from freezer if you like) by evenly distributing salad.
Brush each skewer of seafood w/ the vinaigrette you have set aside. Squeeze some lime juice over seafood and season w/ salt.
Place two skewers on top of greens. Pull skewers if you like. Garnish w/ thinly sliced lime.
Serve w/ full bodied white wine that has some acid to work w/ the lime juice. Sauvignon blanc.
