Original recipe makes 6 Servings
4 Eggs
1 1/2 cRaw rice
1 cHam, chopped
3 tbBread crumbs, toasted
4 tbButter
1 1/2 cKefalotiri cheese, grated
3 1/2 cChicken or beef broth
Salt and pepper to taste

Rizi O Graten (Rice Au Gratin) Preparation

Boil broth w/2 tb. of the butter. Add rice, stirring it so it doesnt stick. Add salt & pepper. Cover pot and simmer until liquid is absorbed (abt. 15 min.). Add 2/3 ofthe cheese, mix well, then remove from heat. Half cool. Beat egg lightly and add to rice. Add ham and mix in well with a fork. Butter a baking pan. Put rice in and spread evenly. Sprinkle with remaining cheese and then the bread crumbs. Melt the remaining butter and drizzle it over the top of the rice. Bake in preheated 350 F. oven abt. 15 min., or until golden brown. Serves 4-6.
