Homemade jam that you can make quickly in your bread machine. You can use fresh or frozen berries for this recipe.
1)Mash the raspberries with a potato masher or a ladle until fairly smooth
2)Sprinkle mixture with a teaspon of lemon or lime juice. Pour mixture into bread machine.
3)Add the sweetener. You can use white sugar or any organic sugar such as dehydrated cane juice, Turbinado, succinat or beet sugar. You can also use raw Agave nectar, you just need to use less (approximately 1/4 to 1/3 cup versus 1/2 cup of sugar).
** If you are using regular pectin, you will need to use 1 cup of sugar for each cup of fruit. You can also leave out the sugar if you want, if you are using No/Low Sugar Pectin**
4) Add 3 tablespoons of No/low sugar pectin. (or 1 box of regular fruit pectin...make sure to adjust sugar amount if using regular pectin)
5) Use dough cycle to mix ingredients for approximately 5 minutes, then press stop and select "Bake" cycle. Stir occassionaly throughout the 50 minute cycle. Leave the door open the last 25 minutes of the cycle to avoid the mixture bubbling over.
6.)At the end of the bake cycle, transfer jam into sterilized glass jars, allow to cool for an hour or so, before putting lids on and storing in your fridge for up to 6 weeks. You can also freeze this mixture for up to 4 months.
The jam is a beautfiul deep red color and tastes delicious on toast, waffles, pancakes or biscuits. It is a super easy recipe, and it makes a lovely gift that you can put in basket along with a loaf of homemade honey wheat bread for a housewarming or other special occasion.
