A cheesy, yummy alternative to Taco Tuesdays!
Pre-heat oven to 375 degrees.
Over medium heat, cook the Ground Beef/Turkey until done and drain if needed.
Add 1 cup of water and 1 packet of Taco Seasoning to the meat, bring to a boil, then reduce heat to low and let simmer for 5 to 7 minutes, stirring occasionally.
Meanwhile, drain and rinse 1 can of Black Beans and 1 can of Whole Kernel Corn. Add to a bowl with 1 can of Rotel (undrained). Mix together and set aside.
Spread Sour Cream, to taste*, on the 4 Tortillas. Next, add a little Cheese on top of the Sour Cream.
(By now, your meat should be finished simmering.)
Add a few spoonfuls of the Black Bean, Corn and Rotel mixture to each Tortilla, then add a few spoonfuls of the meat.
Carefully roll each Tortilla and place them seam-side down into a greased baking dish.
Pour Old El Paso Taco Sauce, to taste**, over the Tortillas and spread with a spoon making sure to cover any exposed edges.
Next, sprinkle 1/2 of the remainder of the bag of cheese evenly over the tortillas.
Drain the excess liquid from the remaining Black Bean, Corn and Rotel mixture and stir into the remaining meat.
Once combined, pour evenly over the tortillas, making sure to completely cover them so that no edges are exposed.
Top off your dish with the remaining 1/2 of the cheese, cover and bake for 20 minutes.
*Mix 1 packet of Taco Seasoning with 16 oz Sour Cream for a great Mexican Sour Cream spread!
**We usually use about 1/2 a bottle.
