If you have any Corned Beef left over, make this.
For the fritters, combine the flour and baking powder together in a bowl and mix in enough water to make a batter with the consistency of single cream.
Pour in 2in of oil into a deep, heavy-based pan and heat until a cube of bread dropped in sizzles and turns golden-brown in 30 seconds (CAUTION: hot oil can be dangerous. Do not leave unattended.)
Dip the mashed corned beef mixed with chopped onion, cauliflower & broccoli into the batter and fry in the oil for 2-3 minutes on both sides, or until golden-brown and crisp. Remove from the pan with a slotted spoon and drain on kitchen paper.
Serve with mashed potatoes and mustard (although I prefer Sweet Chilli sauce).
