Beat eggs, milk, water, salt and a dash of pepper with rotary beater or wire whip. Heat butter or bacon fat in skillet until just hot enough to make a drop of water sizzle. Pour egg mixture into skillet. Turn heat to low. Don't disturb mixture until it starts to set on bottom and sides, then lift and fold over with spatula so uncooked part goes to the bottom. Cook 5-8 minutes, till eggs are cooked throughout, but still moist. Remove from heat immediately.
