Wonderfully hearty pot pie with a surprising crust.
1. Preheat oven to 350 degrees. First prepare the tofu by sautéing with olive oil, lemon, and cumin. Make sure you sear it up so it’s not mushy in your pot pie.
2. Then start on the veggies. Using the same skillet, add about 1/2 cup of vegetable broth and heat up to medium. Add in the potatoes and carrots and cook until softened, adding veggie broth as needed. Add in onions and garlic and cook for about 5 min. Add in peas and mushrooms along with lemon juice, cumin and oregano. Cook 5 minutes, browning them a bit. Add in buttery spread, almond milk, veganase, and flaxseed meal and let it thicken a bit. Add in tofu.
3) Add in arrowroot and let it thicken even more. If it’s too dry add more almond milk.
4) For the crust, combine all the dry ingredients in one bowl. Add in the wet ingredients. Combine well until it forms a thick biscuit like crust. Knead for a few minutes and then divide into two pieces, one smaller than the other.
5) Roll out onto a floured surface. Roll into a circular shape. Prepare the surface of a 9 inch cake pan with oil and flour. Top with larger circular dough. Spread evenly and use a fork to punch a few air holes. Par bake for 10 minutes.
6) Let cool for a few minutes. Add in filling. Top with circular dough piece. Pinch down well. Paint with a mixture of 1 part each of olive oil, lemon juice, and maple syrup.
7) Cook for 20-24 minutes. Let cool completely and serve.
