Truly the Cordon Bleu of wiener stews, this one will knock your block off with it's subtle Creole bouquet and delectable, internationally-infused heartiness. Sacrébleu, that's good wiener stew!
1. Process/chop/mince all ingredients in advance.
2. Add olive oil to large skillet/saucepan, medium heat.
3. Add sliced beef wieners - careful - they may splatter a bit in hot oil - take care - this is a flash fry.
4. Reduce heat a bit and add 2 tblsp white vinegar to season the wieners.
5. Add garlic, carrots, green pepper, onion. Add black pepper and Creole seasoning. Turn up heat and sauté all saucepan contents for approx 7 to 10 minutes, till vegetables 'set up' and get a little browner, mixture combines.
6. Add tomato paste, combine thoroughly for about 5 minutes over continued medium/lo heat.
7. Hit it with the can of tomato sauce and 3/4 can water (about 10 oz). Stir.
8. Add bay leaf.
9. Add the small red beans (pequeños frijoles rojos). Stir all.
10. Simmer on low for 45 minutes. Watch carefully, stir at least 3 or 4 times during.
11. At the end of the simmer, add 1/2 cup flour and another 2-3 tblsp vinegar. Combine, reduce heat. Let the finished product find itself in fridge for a few hours before dinner, or overnight. Reheat and serve to salutations and applause.
