| 8 Cloves garlic; finely minced |
| 1 pnSaffron |
| 5 1/2 cExtra Virgin Olive Oil |
| salt and pepper; to taste |
| 1 Russet potato; boiled, |
| 1 tsCrushed red pepper flakes |
Rouille Preparation
In a large mortar, place potato, garlic, pepper flakes and saffron and grind to a smooth paste. Add oil, 2 tablespoons at a time, working like a mayonnaise until all the oil is incorporated and sauce is smooth and creamy. Season with salt and pepper and serve in a crock.
