A simple St. Patrick’s Day holiday treat that works all year round.
In a medium sauce pan fill 3/4 full of water and add barley
bring to a boil on high heat, then reduce to a high simmer.
While the barley is going, start peeling, coring and slicing the apples.
Add apples to pan, bring back to a boil, then simmer until barley and apples are tender (35-45 minutes)
Drain and discard liquid and using a food processor or blender, blend till smooth and return to pan
Add sugar lemon, nutmeg and heavy cream and bring to a boil, while stirring.
For the holiday, add a pinch of green food dye.
Place in small serving dishes or tins, allow to cool then chill.
When ready to serve garnish with mint leaf and 1/2 walnut piece.
