my way
Really light vanilla sponge with fresh cream and strawberries
1. Beat the eggs for four minutes. Preferably with electric whisk.
2. Add sugar and vanilla beat for further 4 minutes.
3. Fold in sifted flour and baking powder.
4. Gently warm buttermilk enough to melt in butter. Add warm milk and butter to batter and fold in well.
5. Pour into 3 greased and lined 20 cm sandwich pans.
6. Cook on 325*f in pre heated oven for 18-20 mins or until springy in centre or toothpick comes out clean.
7. Leave to cool in tins for ten minutes then turn out and cool completely.
8. Remove the tops of the cakes for better finish then sandwich whipped double cream and strawberries between.
9. Try fresh raspberries as an alternative to strawberries.
