I had already doubled the thyme so I added Worcestershire sauce. The next time I make this I will double the garlic, and maybe marinate the fish in lime juice, and add chicken broth. Original recipe makes 4
1 tbolive oil
1/2 cOnions; chopped
3 large clovesgarlic; minced
1/2 tsDried thyme leaves
1 smallSm zucchini; cut in 1/4 inch Dice (about 1 cup)
1 Red bell pepper; cut in 1/4 Inch dice, (about 1 cup)
Salt, pepper
1 lbTilapia fillets; cut in 8 pc
1 cClam juice
1 cDry white wine
1 14.5-oz canDiced tomatoes; italian-style

Rustic Fish Stew Preparation

Heat oil in a large, non-stick skillet. Saute onion and garlic over medium-high heat for 3 minutes, until just starting to soften. Add bell pepper, succhini, thyme, salt and pepper; saute 3 minutes longer. Add tomatoes with their juice, clam juice and wine. bring to a boil, reduce heat and simmer for 5 minutes. Add fish fillets and simmer 3-5 minutes, until fish is cooked through. Serve in shallow soup bowls with crusty bread. Columbus Ledger-Enquirer

I fixed this dish for dinner tonight. I added a teaspoon of creole seasoning and added clams n mussels. It was wonderful!
