Put one tbsp olive in a non-stick pan and brown mushrooms. Set aside. In a small non-stick pan, add olive oil and saute shallots until soft. Add herbs. Add flour and toast for a couple of minutes. Add tamari and stir. Deglaze slowly with white wine and simmer until alcohol evaporates. Add vegetable stock, stirring often to prevent lumps form forming, until a smooth sauce is formed. Add sauteed mushrooms. Put mixture in a blender an blend until smooth and creamy.
