"I'm not crazy about salmon but this was still pretty good and very easy to make. And I like the idea of starting off the day with a good amount of protein so the eggs, salmon and spinach fit the bill. I used fresh spinach instead of frozen and it came out well. I will probably try another reviewer's idea of using different meats and veggies, too. "

15 1/2 ozAlaska salmon
1 ptNonfat cottage cheese
12 Eggs; beaten
1 tsDried basil
2 cSwiss cheese; Shredded
1/8 tsCayenne pepper
10 ozFrozen chopped spinach
Non-stick vegetable coating

Salmon Frittata Preparation

Drain and flake salmon. Spray 9 x 13-inch baking pan with non-stick vegetable coating. Combine flaked salmon with remaining ingredients and pour into prepared baking pan. Bake at 375 F for 30 minutes, or until frittata is set. this frittata is AMAZING...i make it often, adding different veggies and meat, (ie, asparagus, turkey, chicken.)
