1/2 cCelery; chopped
1/4 tsPepper
1/2 cGreen peas, frozen
2 tbButter
1/2 tsSalt
1 cmilk
1 lgEgg
1 tbLemon juice
3/4 cMilk; and liquid from salmon
1/4 cOnion; chopped
2 tbParsley
1/2 tsSalt
1 16-oz cnSalmon
1 cBread crumbs; or cracker crumbs
2 tbFlour
1/4 tsTabasco sauce
1 dsPaprika

Salmon Loaf with Creamed Peas Preparation

Drtain salmon and reserve liquid. Toss salmon with lemon juice. Add celery, onion, parsley, 1/2 tsp. salt, and crumbs. Combine milk , salmon juice , and egg. Pour over crumb mixture. Mix and put in buttered loaf pan. Bake 45 minutes at 350F. Sauce: Melt butter over low heat. Add flour, pepper, remaining 1/2 tsp. salt, and paprika. Stir to blend. Slowly, blend in milk, stirring constantly. Cook, stirring, until smooth and thick. Add tobasco and peas. Serve creamed peas over slices of salmon loaf.
