A nice twist on a classic recipe
1. Tip the sultanas into a bowl and soak in the amaretto for an hour.
2. Heat oven to 190 C and lightly grease a 23cm loose bottom round cake tin.
3. Crush biscuits into crumbs then melt the 50 grams of butter and stir in crumbs. Mix well then pour into cake tin, press down. Bake for 5 mins then allow to cool. ( I suggest using the base of a glass/Tumbler if you can't find anything suitable.)
4. Meanwhile beat Cream, Cream Cheese Eggs, Flour, Vanilla, and Caster sugar together. This could take while, beat till its smooth! ( I used an electric hand whisk)
5. Stir in sultanas and any Amaretto not absorbed and mix well. (I added a two more table spoons of Amaretto at this point, but this is entirely optional)
6. Then pour mixture into tin and bake for 40 mins or until pale gold around edges but with a slight wobble in middle.
7. Leave in tin until completely cold.
8. Remove from tin, leaving on the base, then sprinkle with dusting of Icing sugar
I must say, this was not originally my recipe, it was given to me by my dear friend Megan Turns :)
another suggestion made to me was to add one ball of ginger (crystallized Ginger) - the balls of stem ginger you get in jars. Gives it a little extra flavour.
