Buttermilk Apple Muffins
Ingredients
| 1 1/2 cAll purpose flour | |
| 1/2 tsCinnamon | |
| 1/4 tsSalt | |
| 1 Egg; beaten | |
| 1 cApples; peeled, chopped | |
| 1/2 cButtermilk | |
| 1/3 cVegetable oil | |
| 1/2 tsBaking soda | |
| 1 cBrown sugar | |
| 1 tsVanilla | |
| 1/4 cWalnuts; chopped |
Buttermilk Apple Muffins Preparation
Preheat oven 325. Place paper liners in muffin tins. Blend 3/4 c brown sugar, oil, egg, and vanilla in lg bowl. Add flour, baking soda and salt. Add apple and buttermilk and mix thoroughly. Divid among tins. Combine remaining 1/4 c brown sugar, walnuts, and cinnamon in sm bowl. Sprinkle over batter. Bake until muffins are brown and test done, 30-35 mins.
