Suggest a better descriptionFill a large saucepan with 6-8 cups of water, add a sprinkle of salt and some olive oil. Place on a cooktop with the heat on high, bring to a rolling boil. When boiling, add in the pasta shells, making sure that each is submerged in the water. Cook pasta for 10 minutes, until al dente. Drain the water off the pasta and rinse with cold water to cool down enough to handle.
Using a large skillet, brown the ground beef (can also use ground pork or turkey...or no meat at all). Drain the fat off the beef and place beef into a large mixing bowl. To the mixing bowl, add the cheeses, spinach, egg and seasonings. Mix well to break down the egg and combine the cheese mixture.
Prepare a 9x13 baking dish by spraying with cooking spray. Pour 1 cup of spaghetti sauce into the bottom of the baking sheet. Begin filling the pasta shells with the cheese mixture, placing each filled shell into the baking dish when done. Once all the shells are filled, pour the remaining spaghetti sauce over the filled shells. Top with additional cheese if desired. Bake at 375 for 20-25 minutes, or until hot and bubbly.
