Combine the flour, salt and pepper on a plate.
Heat a large skillet over medium high heat with 1 tablespoon of oil.
Brush steaks with Dijon mustard on both sides.
Dredge the steaks through the flour mixture on both sides.
Place single layer of steaks in the skillet and cook until brown, about 3 minutes per side.
Remove steaks from skillet, set aside on a plate and continue with the remaining steaks.
For the Sauce:
Pour chicken broth in the same skillet and deglaze
(stir and scrape up any brown bits from the bottom of the pan)
Combine the corn starch and half-and-half in a small bowl and add to the broth.
Bring to a boil and reduce heat to medium.
Whisk in the mustard and season with salt and pepper.
Place steaks on individual plates.
Pour sauce over the steaks and serve.
