in a very large mixing bowl, mix the olive oil with the salt and cayenne pepper. Add the kale and mix with tongs until all the leaves are coated with oil.
Lay parchment paper on 2 baking sheets. Distribute the kale evenly across the baking sheets.
Bake for 20 minutes, stirring and redistributing the kale after 10 minutes.
I used the pre-washed baby kale from Costco. Since it's pre-washed, the leaves weren't soggy. I did not remove the stems--they were perfectly edible.
