Absolutely delicious chocolate mousse made with Splenda...the minimal sugar comes from the bittersweet chocolate. (228g sugar per recipe; 28.5g per serving)
Put chocolate chips, espresso, and Splenda in a generous metal mixing bowl (or top of a double boiler). Set bowl over a large pot filled with an inch or two simmering water. Melt chocolate, stirring often, until smooth. Remove from hear and set aside.
Whisk egg whites in a medium bowl with a mixer until they hold stiff peaks. Whisk cream in another bowl until soft ribbons form.
Stir yolks into warm chocolate mixture. Mix in liqueur. Using a rubber spatula, gently fold in whites until almost blended, then gently fold in whipped cream until no streaks remain.
Pour chocolate mixture into individual serving cups. Cover with plastic wrap and chill until ready to serve.
Serve with sweetened (or unsweetened) whipping cream; add mint leaves, berries and/or chocolate shavings as garnish.
Can make ahead up to three days, covered and chilled.
