This is quick and easy if you buy the pizza dough and have some marinara sauce on hand for serving. A good, filling, and satisfying weekday meal that has the bonus of being pretty darn healthy!
0. Preheat oven to 400ºF.
1. In a large saute pan or wok, briefly saute the garlic just until fragrant, then add kale and wilt. Remove, press to remove any excess moisture, and coarsley chop.
2. In a large mixing bowl, combine cheeses, kale and red pepper flakes.
3. Divide dough into 4 equal portions. Roll out each portion into a large circle, then mound filling over half the dough. Bring the other half the circle over the top and seal up the edges by folding the dough from the bottom over the top, starting at one corner and working toward the other. Make a small incision on the top to allow steam to escape and prevent the contents from spooging out the sides during baking.
4. Transfer the calzones to a pizza stone and bake until the crust is golden brown and crisp, 10 minutes or so.
5. Serve with warmed marinara sauce. Enjoy!
