Preheat oven to 350.
Spray bottom of loaf pan 9x5x3 with cooking spray. Beat all ingredients together until well mixed. Pour into pan and bake until wooden toothpick comes out clean (about an hour). Cool 5 minutes and loosen sides to removed loaf.
