"This was a simple recipe that tasted like I put a lot of work into it. My kids devoured the Tilapia. As a tip, I put a ceramic plate in the microwave for 2 min. with a little water on it. 1 tbolive oil
1/2 cDry white wine
1 1/3 lbFish; about 1/2 inch thick
salt and pepper; to taste
1 tbLime juice
3 Green Onions; chopped
1/3 cAll purpose flour
1/2 tsMargarine or butter
1 clovegarlic; minced

Sauteed Tilapia with Lime Preparation

submitted by: bmarks@pipeline.com (Bev) The dish can be made using any of the following fillets: tilapia, sole, flounder, catfish or orange roughy Rinse fish and pat dry. Put flour in a plate and season with salt & pepper. Dredge fillets in flour, patting to remove excess. Combine garlic, wine, lime juice and margarine in a small bowl. Heat olive oil in a large frying pan over medium-high heat. Add fillets without overlapping (you may need to cook in more than 1 batch). Cook until golden on bottom, about 3 minutes. Turn and cook until opaque through the center, 1-2 minutes more. Transfer to a platter and cover with foil to keep warm. Add wine mixture to pan and boil, scraping up the cooked bits, until reduced by 1/2, 2-3 minutes. Stir in onions and heat about 30 seconds. Pour sauce over fish and serve. Awesome. I didn't use flour and I added some parsley for aesthetics but otherwise followed the recipe. It was really good. We eat fish a lot so this will be added to regular rotation. Thanks!

very fine recipie, quick and easy, except the sauce is too 'limey' for my family. I like the flavor, but the wife and kids would rather I make it next time with a 'sweeter sauce' perhaps an orange sauce or mango chutney.

Careful not to overcook the sauce, it can get that way very quickly so be very careful, and take if off the heat as soon as it's ready or it will overcook as well.
