"I found myself with a bunch of apples & this was a cool way to use one. I split the recipe almost in half (used a little more than half of the flour, and two eggs plus one egg white) because it was just for me. I cooked it in a skillet & then put it in a round cake pan to bake.

1/4 tsPepper
3 Eggs
2 cGolden Delicious Apples; Peeled, chopped
2 tsVegetable oil
1 cSkim milk
1/4 tsSalt
1/2 cOnions; chopped
3/4 cAll-purpose flour
Vegetable cooking spray
1 cdeli ham, lower-salt; Diced
1 tsSugar

Savory Ham and Apple Dutch Baby Preparation

Wrap handle of a large nonstick skillet with aluminum foil. Coat skillet with cooking spray; add oil, and place over medium heat until hot. Add onion and sugar; saute 10 minutes or until browned. Add apple, ham, and pepper; saute 6 minutes or until apple is tender. Remove from heat. Combine milk and next 3 ingredients in container of an electric blender; cover and process until smooth. Pour over apple mixture. Bake at 425 deg for 18 minutes or until slightly puffed and golden. Let stand 2 minutes before serving. Yield: 6 servings (serving size: 1 wedge).
