Try this Vine tomatoes seared salmon with a lemon and herb dressing recipe, or contribute your own.
Suggest a better descriptionPreheat the oven to 220C. Place the cherry tomatoes in a roomy roasting tin with their green stalks facing down. Squeeze over the lemon and add the squeezed-out lemon chunks to the tin. Drizzle with half the oil and season well. Lay the salmon over the tomatoes, skin side up. Drizzle with the remaining oil and season again. Roast for 20 minutes or until cooked through.
Meanwhile to make the dressing whisk all the ingredients together and season to taste - remember that you'll get plenty of saltinesss from the capers. To serve take two big fish slices and ask a friend to helo turn the salmon out on to a warmed platter. Add lots of lemon wedges and set the dressing on the side. Delicious served with new potatoes and a handful of rocket.
This can also be made in advance and then wheeled out of the fridge later on. Allow to sit at room temperature for a little while before eating.
