An unusual and tasty sausage dish my family loves.
1. Grill or sauté whole sausage to caramelize the skin (grilling preferred in order to leave grill marks) approximately 4 minutes per side (save time by using a panini grill).
2. While the sausage is grilling, sauté the minced garlic and onion on medium high in the oil, about 2 minutes till onion is translucent.
3. Slice the sausage into lengthwise quarters and then slice into 1/4" segments and add to sautéing garlic, turning often till browned and cooked through, about 3 minutes on medium.
4. Add coconut cream and milk to cooked rice and mix thoroughly, add in lime, and cook for 2-3 minutes until tender. Sprinkle with lime juice. 5. Add garlic and sausage, and mix thoroughly.
5. Plate and serve, topped with walnuts and finished with salt and pepper to taste. Add a drizzle of your favorite sweet and tart balsamic Vinegar.
