1 tbFresh lime juice
Salt; to taste
1 tbVegetable oil
1 smOnion; chopped
6 tbTomato sauce
2 cWater
black pepepr; Freshly ground, to taste
1 16-oz canpigeon peas
2 Garlic; crushed
1 cUncooked rice
4 tbChopped fresh parsley

Pigeon Peas and Rice Preparation

Heat the oil in a saucepan and add the onion; simmer for 5 minutes. Add the garlic and tomato sauce and cook 1 minute. Add the peas, rice, and parsley and saute 1 minute.
