Pigeon Peas and Rice

| 1 tbFresh lime juice |
| Salt; to taste |
| 1 tbVegetable oil |
| 1 smOnion; chopped |
| 6 tbTomato sauce |
| 2 cWater |
| black pepepr; Freshly ground, to taste |
| 1 16-oz canpigeon peas |
| 2 Garlic; crushed |
| 1 cUncooked rice |
| 4 tbChopped fresh parsley |
Pigeon Peas and Rice Preparation
Heat the oil in a saucepan and add the onion; simmer for 5 minutes. Add the garlic and tomato sauce and cook 1 minute. Add the peas, rice, and parsley and saute 1 minute.
