Sesame-Amaranth Cake
Ingredients
Original recipe makes 1 Cake
| 1/4 tsSea salt (optional) |
| 1 tsLemon extract |
| 3/4 cAM Unbleached White Flour |
| (optional) |
| 3 tbHoney or maple syrup |
| 1 1/2 tsNon-alum baking powder |
| 1 tsVanilla |
| 1/4 cAM Sesame Seeds |
| 1 Egg; beaten or egg replacer |
| 1/2 cAM Unrefined Sesame Oil |
| 1/4 cGround sesame seeds |
| (use blender or grinder) |
| 3/4 cAM Amaranth Flour |
| 1/4 cMilk, soymilk or water |
| 1/2 cAM Sesame Tahini |
Sesame-Amaranth Cake Preparation
Mix dry ingredients and liquid ingredients in separate bowls, then combine and mix well. Press mixture into an oiled and floured 9" x 13" cake pan. Bake at 350 F. for 12-15 minutes or until golden brown. Cool slightly before cutting into small wedges.
